Pecan Pie Cookies
These cookies are sweet, nutty, crunchy and so yummy!
Ingredients:
For the Cookie Base:
1/2 cup unsalted butter, softened
1/3 cup granulated sugar
1 large egg yolk
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp salt
For the Pecan Filling:
1/4 cup brown sugar, packed
1/4 cup corn syrup or maple syrup
1 tbsp unsalted butter, melted
1/2 cup chopped pecans
1/4 tsp vanilla extract
Directions: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the Cookie Dough:
In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the egg yolk and vanilla extract, and mix until combined. Gradually add the flour and salt, mixing until a soft dough forms.
Shape the Cookies:
Scoop about 1 tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheet, about 2 inches apart. Using your thumb or the back of a spoon, make a small indentation in the center of each cookie.
Prepare the Pecan Filling: In a small bowl, combine the brown sugar, corn syrup (or maple syrup), melted butter, chopped pecans, and vanilla extract. Stir until well mixed. Fill the Cookies: Spoon about 1/2 teaspoon of the pecan filling into the indentation of each cookie.
Bake: Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
